"As for taking care of the Motovun Forest, the main actor here is the Croatian Forests state agency, which is in charge of managing it. Over the past few years we managed to convince them that if the forest is maintained, and in good condition, that this would benefit both the truffle hunters and the agency itself. In the long term, we are in the process of seeking protected designation of origin for the Istrian White Truffle, which we expect would be to the benefit of truffle hunters, the state forest agency, and of course everyone who eats truffles."

"Since we are in the European Union, anyone who is a part of the EU can get a license for truffle hunting in Croatia, so we have a lot of truffle hunters (from) outside of Croatia. The main problem is not that they hunt here, the main problem is that they maybe don’t know how to hunt for truffles, they don’t know how to respect the forest. It’s very important to cover the holes after you find a truffle, so that the mycorrhiza, the spores, can go back to the same place. If people are not educated, they can ruin the whole micro-ecosystem of truffles."

“The truffle, the white truffle, it’s very important for our territory. It drives many economies, like all the gastronomy, economics in the way of exporting truffles, and hospitality bringing people here. We organise even a truffle fair here, that brings people from all over the world, to see the truffles and taste the truffles. And here, locally, I don’t think there are any restaurants here in Istria that doesn’t have on the menu something with truffles. But we export it a lot. So, the white truffle is exported all over the world and recognised all over the world, from the US, to Japan, to Korea.”
