"Kellaj is an ancient dish. It is a very, very, old dish from the days of our ancestors. It was just called Kellaj but has come to be known as Kellaj Ramadan. People only eat it during the month of Ramadan, praise be to God. Accordingly, we prepare different types, the regular Kellaj cooked with cream, Kellaj with walnuts, Kellaj with cheese – whatever the customer requests. They just have to request what they want, whether it is walnuts or something else. In the past, people used to eat it filled with walnuts. Now, it has become Kellaj Ramadan and people wait for Ramadan to eat Kellaj Ramadan. Praise be to God."

"Kellaj is a staple dish in Ramadan. We’re so used to it and love it so much that we always wish it would stay available even after Ramadan. Despite the tough economic conditions and the rising costs of everything, this dessert remains essential on the dining table in Ramadan. We always love Arabic sweets, especially Lebanese sweets. And we feel that Kellaj is one of those Lebanese sweets."

"Despite everything that is going, the war and the economic crisis we are going through, Kellaj and other sweets remain a beautifying element of Ramadan. They are for Ramadan. And one popular dish is the Kellaj, that is the dish that is most in demand."

STORYLINE:
Lebanese people wait for Ramadan each year to enjoy a traditional dessert that makes a special return for the Muslim fasting month.

Kellaj Ramadan, one of the most famous Ramadan treats in Lebanon, was once eaten on regular months and was simply known as Kellaj in the past.

Over time, it has come to be known as Kellaj Ramadan, becoming a seasonal delicacy enjoyed after the fast-breaking meal during the month.

"People wait for Ramadan to eat Kellaj Ramadan," said Bilal al-Massry, the of owner of a sweets shop in Beirut.

The dessert is typically made from fried rice pastry dough filled with a milk-based cream, then dipped in syrup.

The filling may vary depending on what the customer requests and the cream can be substituted with walnuts or cheese, al-Massry said.

Socially, Ramadan often brings families and friends together in festive gatherings around meals to break their fast.

Families across the Arab world typically share traditional desserts after they break their fast with savory dishes.

The tradition of Kellaj and other Ramadan treats has endured Lebanon’s economic woes as the desserts remain popular and in demand.

Shopper Fatten Kobasissi said that despite the economic troubles and rising living costs, Kellaj "remains essential on the dining table in Ramadan."

"Kellaj is a staple dish in Ramadan. We’re so used to it and love it so much that we always wish it would stay available even after Ramadan," she added.

Those fasting are expected to also refrain from bad deeds, such as gossiping, and to increase good deeds.
