“Neufchâtel is a cheese made with raw cow’s milk. We let the milk ferment for 24 hours with enzymes and rennet. The milk is then curdled and drained in special fabrics to obtain a paste that we can make shapes with. The shape we use for our Neufchâtel cheeses is mainly the heart-shaped one. The maturing phase takes place in humidified rooms and lasts at least ten days during which taste will develop alongside bacteria."

“The Neufchâtel heart has a little story behind it. Legend has it that, on the Feast of St Valentine, the young dairy maidens of the Pays de Bray would offer these heart-shaped cheeses on Valentine’s Day to those who had stolen their hearts. Today, 80% of Neufchâtel cheese produced and sold has the famous heart shape.”

This town is famous for one particular delicacy that sees a serious peak in popularity in the lead up to Valentine’s Day.  

With records of its manufacture going back one thousand years, the Neufchâtel heart-shaped cheese has gained fame worldwide over the centuries.

Pierre Villiers is one of several cheesemakers in the area.
