STORYLINE:
Shuffling across icy ground, tourist groups pour into Santa Claus Village, a winter-themed amusement park perched on the edge of the Arctic Circle, just seven kilometres north of the city of Rovaniemi in Finland.
 
Visitors come to frolic in the snow, take a reindeer sleigh ride or even meet Saint Nick himself.

And for those who want an extra chill, there’s this ice restaurant, part of a snowman-themed activity park, called Snowman World.

Carvers worked weeks to create these intricate ice carvings, which this year are themed around the jungle, including baboons, parrots, iguanas and more.

"This is super unique. You are inside a building which is made totally out of snow,” explains Marja Mäenpää, from Snowhotel, the tourism business that runs the experience.

“Temperature is the thing. It’s always here from 0 to -5 Celsius degrees. So, it’s a bit chilly.”

Guests eat from ice carved tables and will likely keep their gloves on – the metal cutlery is cold to the touch.

Mäenpää says, due to temperatures, visitors also eat their three-course menu a little quicker than they might in a typical restaurant.

The carefully composed three-course menu is a celebration of local Lappish flavours, including creamy salmon soup, roast elk, reindeer, braised salmon and more.

But there’s no room for delicate items like salad or French fries, executive chef Jussi Kumpulainen says they simply can’t withstand the cold.

“It cannot be airy and fluffy. Or, for example, French fries, it’s three minutes and it’s totally cold,” says Kumpulainen, who’s been working in ice restaurants for about fourteen years.

“Everything has to be rich and creamy, like really good soups and pastas."

Kumpulainen has also created desserts served on this ice plate.

The key, he says, is to make some friction, perhaps a sponge cake, on the bottom of the dessert to stop it slipping away.

… Just don’t lick the plate.
