"So traditionally they would take it around with them in the mountains while they’re working. And at the end of the day, they would melt it over some new potatoes, boiled potatoes and enjoy it that way. It’s quite pungent in it’s smell quite like a Camembert. So you won’t make any friends walking around with it. But when you start serving it, they’ll be coming over."

21. SOUNDBITE (English) Richard Fitch, historic kitchen manager, Hampton Court Palace:
"The food of Christmas is not as exciting in the 16th century as we’d like to think of it. Christmas Day is the first day of 12 days of the gradual build up of feasting, and it’s the end of Advent. So, the first meal is going to be just a normal meal for the King. They don’t have a specific Christmas fair or Christmas menu. So it’s going to be roast meats. It’s going to be roast birds, it’s going to be pies. It’s going to be jellies, small cakes, small sugar work on the table. But realistically, you wouldn’t notice the difference between a Christmas Day meal for Henry VIII and a normal meal for Henry VIII."
