Protein Pancakes:
Prep: 5 minutes | Cook: 10 minutes | Total: 15 minutes
} Yield: 6 servings | Serving Size: 2 (3-inch) pancakes.
Ingredients:
1 scoop unflavored protein powder
2 TBSP warm water
1 c low-fat cottage cheese
1/3 c flour
3 large eggs
1/8 tsp baking powder
1 tsp vanilla or almond extract
Optional: 1/2 tsp cinnamon and/or cardamom
Nonstick cooking spray
Directions:
1. In a small bowl, combine 1 scoop protein powder with 2 TBSP water to dissolve.
2. In a blender, combine all ingredients and blend until smooth.
3. Heat a small skillet over medium-low heat. Spray with nonstick cooking spray.
4. Pour 1/4 cup of the pancake mixture onto the skillet. When the pancake begins to bubble, flip.
5. Cook until golden brown on both sides, about 2-3 minutes per side.
6. Repeat with the remaining pancake batter.
7. Serve with Greek yogurt, fresh berries or jam, nut butter or chopped nuts, or low-sugar syrup.
Recipe Notes:
• To boost the fiber, use whole wheat flour and/or add 1-2 TBSP of ground flaxseed meal.
