A good portion of those, CDC estimates around 125,000 people, get sick with salmonella attributed to consumption of chicken, an additional 43,000 the consumption of turkey products. So you’re looking at 170,000 or so thousand people that, get exposed, consume and get sick because of poultry consumption. We think that makes it a really relevant issue."

"The first component is pre harvest is for the animals is still in the farm growing. We’re making recommendations and guidelines of what people can do at that level, to mitigate the risk, to make it less risky, to produce less salmonella, or to entirely eliminate some of the serotypes that would make people sick. Second component is in the plant. Given that you have this type of operation in the farm, then in your plant, you need to measure which interventions you’re going to do, how many of the antimicrobial rinses you have to have, whether you want to process certain certain flocks before other flocks because some are riskier than others. Right? So this is done across the world, logistical slaughter. The ones that are more contaminated you process at the end of the day. So aren’t ruining the whole day. And so we’re going to be monitoring them. We’re going to be monitoring that the process in the plant is under control, by the submission of this data to us electronically and that to me those two aspects are preventative in nature. Given that not the world is perfect. We have the certain point for, in case some of the product is contaminated above a certain level and with those three serotypes, we will deem that product as an adulterated product and should not go into commerce. We’ve never done this before. So how this will affect people in the future? It means to me as a consumer, there’ll be a lot less possibility for me to get sick through consumption of poultry products, because now there is a system whereby if there is a potential for me to be exposed, that product should not be in commerce, and if it is in commerce, I will recall it."

STORYLINE:
The Agriculture Department on Monday announced plans to limit salmonella in poultry products, a proposal that officials say will keep contaminated meat off store shelves and lead to fewer illnesses.

Under the proposed new rule, poultry companies would have to keep salmonella levels under a certain threshold and test for the presence of six particularly sickening forms of the bacteria. If the bacteria exceeds the proposed standard or any of the six strains are found, the poultry couldn’t be sold and would be subject to recall.

"Over a million people get sick every year in the United States, by salmonella," said Dr. Emilio Esteban, USDA undersecretary for food safety. "We think that makes it a really relevant issue."

The U.S. Centers for Disease Control and Prevention estimates the bacteria causes 1.35 million infections a year, most of them through food, and about 420 deaths. The Agriculture Department estimates 125,000 infections from chicken and 43,000 from turkey each year.
