STORYLINE:
The largest food market in Peru celebrated the International Day of Potato on Thursday with folk music, dancing and traditional food.
The potato, which has been cultivated in the Andes for thousands of years, has become the third most consumed food in the world, after rice and wheat.
At the Santa Anita market in Lima, which receives almost 2,000 tons of potatoes a day, officials described the root vegetable as the true treasure of the Incas.
In 2023, Peru produced 5.4 million tons of potatoes from around 3,000 varieties, a significant portion of the 5,000 varieties available worldwide.
According to official data, more than 700,000 families grow potatoes, mainly in the Andes, on small plots of one hectare that produce an average of 13 tons each.
The Spanish brought the potato from the Andes to Europe in the 16th century, and the crop became popular throughout the rest of the world, including China and the United States, where it arrived mainly through Irish immigration.
The Food and Agriculture Organization of the United Nations (FAO) indicated that 375 million tons of potatoes were produced worldwide in 2022, led by China with more than 95 million tons.
In December 2023, the United Nations decided to designate 30 May as the International Day of Potato.
