Ingredients
8 oz low-fat ricotta cheese
1/2 c grated Parmesan cheese
1 large egg, beaten
1 tsp Italian seasoning
Nonstick cooking spray
1/2 c low-sugar marinara sauce
1/2 c low-fat mozzarella cheese
Directions
1. Preheat oven to 450°F.
2. In a medium bowl, mix the ricotta, Parmesan, egg, and Italian seasoning until smooth.
3. Spray 4 small ramekins with cooking spray. Spread the ricotta mixture evenly in each ramekin.
4. Top the ricotta mixture with the marinara sauce, then sprinkle with the mozzarella.
5. Bake for 15-20 minutes, or until the cheese is melted, and serve.
Recipe Notes
• Serve with a side of steamed/sauteed zoodles, spaghetti squash, or any non-starchy vegetable of your choice
• Add thinly sliced eggplant or zucchini between layers
• For extra protein add lean ground beef, turkey, chicken, or Italian sausage
