"We have about ten pastries in the store. We have the strawberry tart, the raspberry tart, the passion fruit tart and the lemon tart. But generally we rely on seasonal products – for example right now this is the period when we make the pistachio tart, but it will disappear within a few months and it will be replaced by apricot tart or Bourdaloue tart."

“Well Nicolas Stohrer was the pastry chef of Louis XV. He was serving the king and all the court in Versailles in the early 18th (century). He was doing all the banquets and all the big parties for the king. The king really loved him and he was really a fan of all the pastry he made. But after several years in Versailles he decided to open his own shop in Rue Montorgueil in 1730, where we are today.”

“The relationship between Parisians and French patisserie is very strong because we feel like patisserie is always here for all important events, for weddings, for birthdays, for goûter (mid afternoon snack), when we have friends over you buy patisserie. And for us Parisians it’s really, really important too and it’s been with us for our whole lives.”

STORYLINE:
The oldest patisserie in Paris has been making exquisite cakes since 1730.
Founded by Louis XV’s pastry chef, Stohrer patisserie is where the rum baba was invented – and the shop still sells the sweet treat to this day.
It’s a recipe that’s three hundred years old. But even in modern day Paris, the rum baba is still a popular treat.
The rum-soaked cake was invented by pastry chef to the royals, Nicolas Stohrer.
And he perfected the recipe when he opened this patisserie all the way back in the 1700s.

From the gilded halls of Versailles, to a prime spot on a central Paris street.
Stohrer patisserie is a purveyor of traditional French cakes.
Eclairs, strawberry cakes, passion fruit tarts and morsels of chocolatey goodness fill the display cases.
The variety and the craftsmanship is testament to Parisians’ love of sweet treats.

And for us Parisians it’s really, really important too and it’s been with us for our whole lives,” says Dolfi.
The first shift starts at 6am to make sure cakes are ready for when the shop opens.
